- 10.5 oz penne pasta
- 1 lb boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 small onion
- 1 red bell pepper
- 1 green bell pepper
- 2 cloves garlic
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Cajun seasoning (homemade or store-bought)
Instructions
- Prepare the Cajun seasoning by mixing paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and salt in a bowl.
- Cook the penne pasta according to package instructions in salted water until al dente. Drain and set aside.
- In a large skillet over medium-high heat, heat olive oil and butter. Season chicken with Cajun seasoning and cook until browned and cooked through. Remove chicken from skillet.
- Sauté diced onion and sliced bell peppers in the same skillet for 3–4 minutes until softened.
- Add minced garlic and remaining Cajun seasoning; cook for another minute.
- Pour in heavy cream; bring to a simmer and cook for about 5 minutes until slightly thickened.
- Return chicken and pasta to the skillet, stirring in Parmesan cheese until well combined.
- Serve garnished with chopped parsley and extra cheese if desired.
