  • 450g baby spinach leaves
  • 500g button mushrooms
  • 5 cloves garlic, minced
  • 1 tbsp grated ginger
  • 2 hot green chillies, minced
  • 3 tbsp ghee, butter, or oil
  • 1 tsp ground cumin
  • 2 tsp kasoori methi
  • 2 tsp garam masala
  • 1/2 tsp turmeric
  • 65ml double (heavy) cream

Instructions

  1. Prepare the ingredients: Wash spinach and dry; clean and slice mushrooms.
  2. Sauté the mushrooms in heated ghee until golden brown, then set aside.
  3. Cook garlic, ginger, and chillies in the same pan until fragrant.
  4. Add spinach, kasoori methi, garam masala, and salt; cook until wilted.
  5. Blend the spinach mixture into a coarse puree using an immersion blender.
  6. Stir in cream and simmer for about 5 minutes.
  7. Add sautéed mushrooms back into the curry and cook for another few minutes.
