  • 8 oz Orzo Pasta
  • 1 tbsp Olive Oil
  • 8 oz Sliced Mushrooms
  • 3 Cloves Garlic (minced)
  • 4 cups Baby Spinach
  • 1/4 cup Grated Parmesan Cheese
  • Salt and Black Pepper (to taste)
  • Red Pepper Flakes (optional)
  • Fresh Parsley (optional, chopped)

Instructions

  1. Boil water in a pot and cook orzo until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and cook for 5–7 minutes until browned.
  3. Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
  4. Add baby spinach to the skillet and cook for about 2–3 minutes until wilted.
  5. Toss the cooked orzo into the skillet, mixing well with mushrooms and spinach.
  6. Remove from heat, stir in grated Parmesan cheese, and season with salt and black pepper.
  7. Garnish with red pepper flakes and chopped parsley if desired. Serve warm.
