  • 4 chicken breasts
  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 1 ½ cups chopped fresh spinach
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Drizzle olive oil over the chicken breasts and season both sides with paprika, garlic powder, onion powder, and salt.
  3. Carefully cut pockets in each chicken breast without cutting all the way through.
  4. In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining salt until smooth.
  5. Stuff each chicken pocket with the spinach mixture.
  6. Place stuffed breasts in a greased baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
