  • 2 tablespoons olive oil
  • 2 cups finely diced onion
  • 1 cup finely diced carrot
  • 1 cup finely diced celery
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 11/2 teaspoons ground cumin
  • 1 teaspoon dried thyme
  • 1/8 teaspoon red pepper flakes
  • 11/2 cups green split peas (rinsed)
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone (or additional ham)

Instructions

  1. In a large pot, heat olive oil. Sauté onion, carrot, celery, and seasonings until softened.
  2. Stir in garlic, spices, and rinsed split peas; mix well.
  3. Add ham bone and chicken broth. Bring to boil, then reduce heat and simmer uncovered for 60–90 minutes until peas are tender.
  4. Remove the ham bone, shred the meat, and discard bones/fat. Blend part of the soup for creaminess before returning it to the pot.
  5. Serve hot with your choice of garnishes.
