  • 1/2 cup mayonnaise

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons dijon mustard
  • 1 small red onion (finely chopped)
  • 5 crispy cooked bacon strips (crumbled)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped dill pickles
  • Salt & black pepper (to taste)

Instructions

  1. Boil the red potatoes in a large pot of cold water until fork-tender (10-15 minutes), then drain and cool.
  2. In a mixing bowl, whisk together mayonnaise, sour cream, dijon mustard, and apple cider vinegar until smooth.
  3. Add cooled potatoes, red onion, bacon, shredded cheese, parsley, and dill pickles to the dressing. Stir gently to combine and season with salt and pepper.
  4. Cover the salad with plastic wrap or a lid and refrigerate for at least one hour before serving to meld flavors.
