  • 1 lb vanilla cream cookies (about 34 cookies)
  • 6 tablespoons butter, melted
  • 1 small box (3.3 oz) strawberry gelatin
  • 1 cup boiling water
  • 16 oz cream cheese, softened (2 bricks)
  • 3/4 cup granulated sugar
  • 2 cups heavy whipping cream
  • 1/2 cup powdered sugar
  • Whipped topping for garnish

Instructions

  1. Prepare the crust by processing vanilla cream cookies into fine crumbs. Mix with melted butter and press into a greased springform pan. Freeze for 15 minutes.
  2. Combine boiling water and strawberry gelatin until dissolved; set aside to cool.
  3. Beat softened cream cheese and sugar until smooth. In another bowl, whip heavy cream with powdered sugar until stiff peaks form.
  4. Fold half of the whipped cream into the cream cheese mixture, then fold the other half into the cooled gelatin mixture.
  5. Layer half of the strawberry mixture onto the crust, freeze for 15 minutes, then add the cream cheese layer followed by the remaining strawberry mixture.
  6. Top with crushed cookie crumble and chill in the refrigerator for at least four hours before serving.
