  • 16 oz medium-sized baby bella or portobello mushrooms
  • 4 oz cream cheese
  • 1/2 cup fresh grated Parmesan cheese
  • 1 shallot
  • 3 garlic cloves
  • 1 egg
  • Olive oil
  • Bread crumbs
  • Fresh herbs (cilantro optional)
  • Salt and black pepper

Instructions

  1. Preheat the oven to 350°F and grease a baking dish.
  2. Clean the mushrooms with a damp paper towel. Remove and chop the stems.
  3. Sauté chopped shallots and mushroom stems in olive oil until tender. Add minced garlic and cook until fragrant.
  4. In a bowl, combine the sautéed mixture with cream cheese, bread crumbs, Parmesan cheese, egg, salt, and pepper.
  5. Stuff each mushroom cap with the filling mixture and arrange in the baking dish.
  6. Bake for 20–25 minutes until golden brown on top.
  7. Serve warm with additional Parmesan sprinkled over.
