Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, cream together the softened butter and both sweeteners until smooth.
- Add pureed pumpkin, egg, and vanilla extract; mix well.
- In another bowl, combine almond flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into the wet mixture until just combined.
- Line a baking sheet with a silicone mat and form sticky dough balls about 1½ tablespoons each.
- Flatten each ball gently before placing them on the baking sheet.
- Bake for 10–13 minutes until edges are golden but centers remain soft.
- Let cool on the mat for about 10 minutes before transferring to a cooling rack.
