  • 3 cups graham cracker crumbs
  • 2 (3 oz.) packages berry blue Jello
  • 2 cups blueberry pie filling
  • Fresh strawberries and blueberries for topping
  • about 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla
  • ½ cup unsalted butter-softened
  • 1 cup powdered sugar
  • ½ cup+ 2 tablespoons unsalted butter-melted
  • ¼ cup strawberry jam
  • 1 cup of canned crushed pineapple-drained from juice

Instructions

  1. Prepare the graham cracker base by combining crumbs with melted butter and strawberry jam. Press into a 9×13-inch dish.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth; fold in whipped cream.
  3. Layer half of the cream cheese mixture over the crust, followed by blueberry pie filling and crushed pineapple.
  4. Dissolve berry blue Jello in boiling water; pour over fruit layers once cooled slightly.
  5. Spread remaining cream cheese mixture on top, then refrigerate for at least three hours before garnishing with fresh berries and chocolate chips.
