Ingredients

  • 2 (5 oz) cans tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, onion, celery, garlic, parsley, mayonnaise, olive oil, mozzarella cheese, salt and pepper. Mix until well combined.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of a slice of bread and place it buttered-side down in the skillet.
  4. Scoop about 2 tablespoons of the tuna mixture onto the bread while it browns.
  5. Butter another slice of bread on one side and place it on top of the tuna mixture (buttered side up).
  6. Grill until golden brown on one side; carefully flip to brown the other side.
