  • 4 salmon fillets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 34 sun-dried tomatoes
  • 125ml dry white wine
  • 250ml double/heavy cream
  • 50g Parmesan cheese
  • 30g fresh spinach
  • Salt and pepper to taste

Instructions

  1. Pat the salmon dry and season with salt and pepper. Heat olive oil and butter in a frying pan over medium-high heat.
  2. Sear the salmon skin-side up for about 6-7 minutes until golden brown. Remove and set aside.
  3. In the same pan, sauté minced garlic and sun-dried tomatoes for 30 seconds on low heat. Deglaze with white wine and simmer for about 5 minutes until reduced by half.
  4. Stir in heavy cream and grated Parmesan until well combined. Add fresh spinach and return the salmon to the pan. Simmer for an additional 5 minutes before serving.
