  • 1 large yellow onion, diced
  • 3 ribs celery, diced
  • 2 large carrots, sliced
  • 2 teaspoons garlic, minced
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 2 cans Great Northern beans, drained and rinsed
  • 2 cups fresh baby spinach
  • ½ cup heavy whipping cream

Instructions

  1. In a large Dutch oven over medium-high heat, brown the sausage for 10–15 minutes until fully cooked.
  2. Reduce heat to medium, then add onions, celery, and carrots; sauté for about 3–5 minutes until softened. Stir in garlic and cook for an additional minute.
  3. Mix in tomato paste and seasonings (Italian seasoning, crushed red pepper, black pepper).
  4. Add chicken broth and beans; bring to a simmer for around 6–7 minutes.
  5. Stir in heavy cream and spinach until the spinach wilts (approximately 5 minutes).
  6. Serve warm with parsley garnish.
