  • 6 large russet potatoes
  • 12 oz bacon
  • 1 cup half and half (or heavy cream)
  • 1/2 cup salted butter
  • 3 cups shredded sharp cheddar cheese
  • 1 packet dry Ranch salad dressing mix
  • Sour cream
  • Garlic salt
  • Onion powder
  • Green onions

Instructions

  1. Preheat your oven to 450°F. Scrub potatoes clean, then rub with vegetable oil and sprinkle with salt and pepper.
  2. Bake potatoes for 60–75 minutes until tender. Lower the oven temperature to 350°F.
  3. Cook bacon in a skillet until crispy; set aside to drain on paper towels.
  4. Cut baked potatoes in half and scoop insides into a mixing bowl. Mash until chunky.
  5. Mix in sour cream, half and half, melted butter, Ranch seasoning, garlic salt, onion powder, and black pepper.
  6. Fold in cooked bacon (reserve some for topping), cheese, and sliced green onions.
  7. Pour mixture into a greased baking dish; top with remaining cheese and dot with butter.
  8. Bake at 350°F for 35–45 minutes until golden brown.
