Ingredients
- 2 lbs Russet potatoes
- 4 oz shredded cheese (your choice)
- 4 tbsp unsalted butter
- ¼ cup sour cream
- ¼ cup buttermilk
- 2–4 scallions
- 4 strips bacon
Instructions
- Preheat the oven to 400°F.
- Rub potatoes with oil, sprinkle with salt and pepper, and bake on a wire rack over a baking sheet for 45 minutes to an hour until tender.
- Let the potatoes cool slightly, then cut in half and scoop out the flesh into a bowl.
- Crisp the potato shells in the oven for another 10 minutes.
- Mash potato flesh with cheese, butter, scallions, sour cream, buttermilk, salt, and pepper.
