  • 1 cup salted butter (room temperature)
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 6 tablespoons salted butter (for caramel)
  • 1 cup granulated sugar
  • ½ cup light corn syrup
  • 1 cup heavy whipping cream
  • 8 ounces milk or dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C). Cream together butter and powdered sugar until fluffy. Gradually mix in flour and vanilla extract.
  2. Press the mixture into a greased 9×13-inch baking dish. Bake for 20 minutes until golden.
  3. For the caramel layer, melt butter, salt, corn syrup, and sugar in a saucepan over medium heat. Stir in half of the cream and let boil for 5 minutes without stirring. Remove from heat and add remaining cream and vanilla.
  4. Pour the caramel over the baked shortbread.
  5. Melt chocolate with remaining cream in another saucepan over low heat, then pour over caramel layer. Allow to cool completely before slicing.
