  • 32 ounces cream cheese (4 packages), room temperature
  • 5 large eggs, room temperature
  • 2 cups sour cream, room temperature
  • 8 tablespoons butter, room temperature
  • 1 ½ cups sugar
  • 2 tablespoons cornstarch
  • 2 vanilla beans (or 1 ½ teaspoons pure vanilla extract)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Preheat oven to 300º F (150º C).
  2. Prepare a 10-inch springform pan by wrapping it in aluminum foil and buttering the inside.
  3. In a mixing bowl, blend cream cheese and butter with an electric mixer until smooth.
  4. Add eggs one at a time, mixing gently between each addition.
  5. Stir in sour cream until well combined.
  6. Mix in sugar, cornstarch, vanilla beans (or extract), and lemon juice until smooth.
  7. Pour batter into prepared pan and smooth the top.
  8. Place the springform pan inside a roasting pan; add boiling water halfway up the sides of the springform pan.
  9. Bake for about 2 hours until lightly browned on top; center should be slightly wobbly.
  10. Allow to cool completely before refrigerating for at least 4 hours or overnight.
