  • 340 grams brown sugar
  • 4 grams salt
  • 340 grams evaporated milk
  • 170 grams heavy cream
  • 285 grams corn syrup
  • 475 grams powdered sugar
  • 90 grams vegetable shortening
  • 75 grams corn syrup
  • 2 grams vanilla

Instructions

  1. Prepare a large piece of parchment paper on your workspace.
  2. In a heavy-duty pot, combine unsalted butter, brown sugar, salt, evaporated milk, heavy cream, and corn syrup. Cook over medium-low heat until melted and mixed.
  3. Increase heat to medium-high and stir constantly until the mixture reaches 241°F (115°C). Pour onto parchment paper and let cool.
  4. For the vanilla cream, mix vegetable shortening with powdered sugar and vanilla until combined; add water for desired texture.
  5. Roll cooled caramel into logs filled with vanilla cream, then slice into pieces.
