  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup vegan butter (for frosting)
  • 26 tbsp non-dairy milk
  • 1 tsp vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • 23 cups powdered sugar, sifted

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Prepare the flax egg by mixing ground flaxseed with water; let sit for 5 minutes.
  3. In a large bowl, cream together softened vegan butter, brown sugar, and granulated sugar until fluffy. Add the flax egg, molasses, and vanilla; mix well.
  4. Gradually add quick oats, flour, baking soda, cinnamon, nutmeg, and salt until just combined.
  5. Scoop tablespoon-sized portions onto the prepared baking sheet; slightly flatten each ball. Bake for 13–15 minutes until edges are set.
  6. Allow cookies to cool before preparing the frosting: cream together softened vegan butter with powdered sugar and non-dairy milk until fluffy.
  7. Spread or pipe frosting onto half of the cooled cookies; top with remaining cookies to create sandwich pies.
