- 1/2 tsp salt
- 1/4 tsp ground nutmeg
- 1/2 cup vegan butter (for frosting)
- 2–6 tbsp non-dairy milk
- 1 tsp vanilla extract (for frosting)
- Pinch of salt (for frosting)
- 2–3 cups powdered sugar, sifted
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Prepare the flax egg by mixing ground flaxseed with water; let sit for 5 minutes.
- In a large bowl, cream together softened vegan butter, brown sugar, and granulated sugar until fluffy. Add the flax egg, molasses, and vanilla; mix well.
- Gradually add quick oats, flour, baking soda, cinnamon, nutmeg, and salt until just combined.
- Scoop tablespoon-sized portions onto the prepared baking sheet; slightly flatten each ball. Bake for 13–15 minutes until edges are set.
- Allow cookies to cool before preparing the frosting: cream together softened vegan butter with powdered sugar and non-dairy milk until fluffy.
- Spread or pipe frosting onto half of the cooled cookies; top with remaining cookies to create sandwich pies.
