  • 3 chopped carrots
  • 2 chopped celery stalks
  • 1 cup chopped yellow onion
  • 3 minced garlic cloves
  • 32 oz vegetable broth
  • 30 oz canned diced tomatoes (with liquid)
  • 3 Yukon gold potatoes (peeled and chopped)
  • 1 cup chopped green beans
  • 1 cup frozen corn
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté carrots, celery, and onion for about 5 minutes until softened.
  2. Add garlic and cook for an additional 30 seconds until fragrant.
  3. Stir in vegetable broth, diced tomatoes, potatoes, green beans, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 8-10 minutes until veggies are tender.
  4. Finally, add frozen corn and peas; cook for another 2 minutes until heated through.
