Ingredients

  • 4.5 cups watermelon (cut into chunks)
  • 1 cucumber (seeded and diced)
  • 1 red bell pepper (seeded and chopped)
  • 3 roma tomatoes (seeded and diced)
  • 1/4 red onion (diced)
  • 1 jalapeño (seeded and diced small)
  • Fresh basil and parsley (minced)

Instructions

  1. Whisk together sherry vinegar, olive oil, salt, and pepper in a bowl.
  2. In a blender, combine watermelon chunks, half of the cucumber, half of the bell pepper, two tomatoes, and red onion; blend until smooth while adding the vinegar mixture.
  3. Pour blended broth into a large container; stir in remaining diced watermelon, cucumber, bell pepper, one tomato, jalapeño, basil, and parsley.
  4. Chill for at least an hour before serving for optimal flavor.
