  • 2 (15 oz) cans great northern beans
  • 1 cup sour cream (or plain Greek yogurt)
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked chicken, shredded (rotisserie or leftover chicken)
  • Fresh cilantro
  • Shredded cheese
  • Tortilla chips
  • Sliced green onions
  • Sliced avocado

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Sauté chopped onion until softened, then add minced garlic.
  2. Pour in chicken broth and stir in diced green chilies and spices; season to taste.
  3. Rinse beans; puree a portion with some broth for a creamier texture.
  4. Add both pureed and whole beans along with corn to the pot; simmer uncovered for 15-30 minutes.
  5. Stir in sour cream and cooked chicken until well combined.
  6. Serve hot with desired toppings like cilantro, cheese, and avocado.
