  • 4½ cups chicken broth (divided)
  • ¼ cup flour
  • 2 cups half-and-half cream
  • 10 strips cooked bacon, diced (divided)
  • 2½ cups shredded cheddar cheese

Instructions

  1. In a large pan over medium heat, melt the butter and sauté the carrots, celery, onion, red bell pepper, and mushrooms until tender.
  2. In a separate saucepan, boil the diced potatoes in 1½ cups of chicken broth until tender; drain excess liquid.
  3. Combine cooked potatoes with the sautéed vegetables and sprinkle with flour, stirring to coat.
  4. Gradually stir in 3 cups of chicken broth and half-and-half cream; cook while stirring until thickened.
  5. Reduce heat and mix in bacon bits (reserve some for garnish), dry mustard, hot sauce, garlic salt, salt, and pepper.
  6. Slowly incorporate shredded cheddar cheese until melted; avoid boiling to maintain creaminess.
  7. Serve warm topped with remaining bacon bits.
